Best. Pancake. Day. Ever.

Over the 4th of July weekend, with my mother and my sister visiting, I decided to make blueberry pancakes for the entire family. My family loves pancakes, especially my youngest son, Timothy, who would live off of them if I let him. Every year, he asks for pancakes as his special birthday dinner. If we’re going out to eat, he begs for IHOP. And, if I’m stuck on what we should have for dinner, he asks for…you guessed it!

My son isn’t the only ones who enjoy pancakes. Years ago, when Dale and I were first married, we both woke up craving pancakes. When Dale realized there was no Bisquick to be found in our pantry, he said: “That’s okay. We could have bacon & egg sandwiches instead.”

But, while he was showering, I pulled down my trusty Better Homes & Gardens cookbook–you probably know the one–with the red & white gingham cover, it’s been a staple for generations of household cooks. Following the recipe, I made pancakes from scratch. This impressed my husband so much; he still talks about it to this day: “This is why I married my wife”, he tells people. “She doesn’t need a mix; she can make everything from banana pudding to pancakes from scratch!”

While I was whipping up those blueberry pancakes, my sister came into the kitchen to show me a video she’d just discovered on Facebook. The video features what I can only call a pancake artist, creating astonishingly impressive portraits of superheroes from tinted pancake batter in squeeze bottles.

I looked at my sister in horror and begged: “Oh my God, please do not show that video to my boys! Next thing I know, they’ll be asking for Iron Man pancakes!” I have my share of superpowers, but I don’t think pancake art is one of them!

Speaking of superpowers, here is the story of another fellow pancake-maker with some serious skills:

While serving her husband a homemade pancake breakfast one morning, a woman said, “I bet you don’t know what day this is.”

“Of course I do,” he indignantly answered, going out the door to the office. At 10 AM, the doorbell rang and when the woman opened the door, she was handed a box containing a dozen long-stemmed red roses. At 1 PM, a foil-wrapped, two-pound box of her favorite chocolates arrived. Later, a local women’s boutique delivered a designer dress. The wife couldn’t wait for her husband to come home.

“First the flowers, then the chocolates, and then the dress!” she exclaimed. “I’ve never had a more wonderful National Pancake Day in all my life!”
